breakfast polenta

Yesterday morning I stood staring at a full refrigerator thinking ” I really need to eat the food I have in here… time to get creative.” I’m a pretty big fan of polenta, but I’ve never made it for breakfast, which got me thinking, “how would I eat it?” Maple syrup was the first thing that came to mind, so I decided to try frying up two little polenta cakes, pouring on the maple syrup, then topping them with pecans and fruit. Let me tell you, this was an amazing breakfast. It felt decadent, but was still light enough to give me energy and not weigh me down. So the next time you have some left over polenta, I highly suggest trying it for breakfast!
