If you haven’t already noticed, I’m a fan of one dish wonder recipes. I usually eat smaller meals more frequently throughout the day, so having a salad, side dish, bread, and main course for meals isn’t my jam. One dish meals are easy and usually quick. Perfect for me!
For #meatlessmonday yesterday I decided to try making my own version of veggie fried rice and it was delicious!
Add a drizzle of olive oil to a pan and heat to medium/low. Add two cups of cooked brown rice, 1/3 cup canned carrots, 1/3 cup fresh or frozen corn, and a 1/3 cup fresh or frozen peas. Let them cook for a few minutes, stirring occasionally. Add a drizzle of soy sauce and stir well. Enjoy!
