I love mashed potatoes. They are one of my favorite comfort foods, but they are also easy on my delicate little stomach. Today I tried a new recipe… baked mashed potato cups and they were amazing!
I started by making normal mashed potatoes, adding in a few veggies, scooped the mix into muffin pans, topped with a bit of cheese, and baked. Easy peasy!
In a microwave safe dish, add 2/3 cup water, 1/4 tsp salt, and 1 tbsp butter (I use Earth Balance vegan butter). Microwave for 2 minutes. Remove dish from microwave and add 1/3 cup milk (I prefer almond milk) and 2/3 cup potato flakes. Stir and let them fluff up. Mix in a small handful of veggies (I used frozen corn and peas, but you can use any veggies you want, frozen or fresh). Spray muffin tins with cooking spray and scoop the potato mix into the cups. It should fill about four. Top with your choice of cheese (I used Daiya cheddar). Bake for 40 minutes at 400 degrees. Let them cool at least 10 minutes before taking them out of the pan. Enjoy!
