If you saw my last post about zoodles, it should be no surprise that I’m already posting another zoodle recipe. I could easily make zoodles 3-4 times a week and just change out the toppings depending on what I have on hand. Today it was diced tomatoes and parmesan!
Just grate a zucchini into zoodles, put into a skillet with a drizzle of olive oil and cook for a few minutes. Once the zoodles have cooked, add in the tomatoes and a pinch of salt and pepper. Top them off with some parmesan (or in my case vegan parmesan) and enjoy!
PS. Tella didn’t actually eat any of the zoodles, although she did look like she was ready to dive in! Yum!
