soy ginger rice noodles

Sometimes you just don’t want to fuss with making dinner. That’s why I love keeping rice noodles on hand, they are super easy and quick to cook, so just like that… dinner’s ready!


Ready for the recipe, here we go! Bring a pot of water to a boil. Turn off the heat, add the rice noodles, and let them cook for 10 minutes. Drain the water, add some shredded carrots, a pinch of ginger, and a drizzle of soy sauce. Easy peasy, right?

    • Thank you! I would have thrown more veggies and even some tofu on top, but I didn’t have them on hand. Time to go grocery shopping!
