zoodles with peas, basil, and parmesan

I just made zoodles for the first time… WHAT? How have I gone this long without trying them? Seriously, they just changed my life! I’ve been having a tough go of it with food this year and this super easy recipe is not only delicious, but stomach safe. No dairy, no gluten, no problems!


So what’s in this amazing zoodle recipe? Zoodles (zucchini noodles, sauteed in a bit of olive oil), peas, basil, salt and pepper to taste, and parmesan cheese (vegan, of course). I used a grater for my zoodles, no fancy or expensive tools here. After I grated the zucchini into zoodles, I tossed them into a skillet with a drizzle of olive oil and cooked them for a few minutes. I added the peas, basil, and salt and pepper in then cooked for a few more minutes. Finally, I topped them off with some parmesan cheese and voila! Easy peasy zoodles!
